Lazy food day- again

Allergy season is definitely here. Actually, I don't think it ever really goes away in South Carolina. That means it's benadryl time. Which is bad, 'cause it makes me sleep too much.

So yesterday was not the most food filled. Because I slept the whole thing.

I finished off the cooked black beans. And the avocado. If I'd had chips I would have eaten the beans cold as on-chip-salad.

Instead I heated it and had yum.

Black Bean Salad, hot or cold

2C black beans (or 2 cans)
1/2 tomato, diced
1/4 onion, diced
1/2 avocado, diced
1-3 cloves fresh garlic, crushed and diced
Splash oil (~1/4C)
Splash vinegar (to taste)
Salt
Juice from 1/4 fresh lime (or squirt of bottled juice)
Handful chopped cilantro
frozen corn

If making this hot, heat the beans (and/ or corms), then add the veggies- hot avocado is foul. This is also tasty blended, on chips, in tacos, or just off a spoon. All ingredients are optional, of course, but if you leave out the black beans you have to call it something else.

Now, time for another benadryl, and probably another nap.

  1. RE: Allergies - cheaper than Benadryl and almost as helpful: a combo of generic cetrizine hydrochloride (name brand would be Zyrtec; I take one at night), and generic chlorpheniramine maleate (name brand would be Chlor-Trimeton; one or two a day, before bed and maybe in the morning if necessary). I got allergy shots through my insurance, which helped me a lot, but I still have these two as my go-to's, because my blood pressure doesn't allow me to take stimulant cold meds.

Hope your food plans go well for the rest of your year, or that you come into some bucks! D.

  2. I second the Zyrtec, wether it is name brand or generic (all the major chains have a generic version). I have a dog and 2 cats, are allergic to all 3, and never have a problem as long as I take 1 Zyrtec a day.

  3. I haven't tried the generic of zyrtec with that other one. I'll have to try it. It doesn't work for me by itself. I don't know if it runs right through me, or if it just doesn't work for me. Until/ unless I find something else it's diphenhydramine hydrochloride for me.

  4. zyrtec is almost a dollar per pill, we use the generic bought at Sams for much much cheaper. (but its better to try it before ending up with a warehouse size package if it doesn't work...)

  5. Oooh, this will help me a lot! I bought a bunch of cute fruity yellow tomatoes in bulk from Sam's and I need to use them up. Thanks a bunch!

(And I'm always short on lunch recipes, thanks to the public school lunch system, I don't really know how to eat it.)
