Day 69- eggplant still in fridge

Sometimes, coming up with titles, or even just writing out the date, I feel like a star trek captain, or a pirate captain, or a very bored lab assistant. Or even a prisoner in a castle tower- "day 42, nothing happened, day 58, nothing happened, day 65, an ant crawled across the window frame, wonder how it got here."

What's most interesting to me about the whole "eggplant thing" is that I've already done the most time consuming part- I poked holes in it, rolled it in some oil, and baked it for most of an hour (though I admit I turned the oven off after 30 minutes and let it finish roasting in the cooling oven). All I have to do is peel the skin off and blend it with some oil, garlic, and salt. Lemon if I want it. This is not difficult, I just don't seem to want to do it. Odd...

So far as other motivation, I had some oatmeal with raisins and almonds (almonds are almost gone) for breakfast. Black beans, "dahl", and rice for dinner. Also ate a couple strawberries. I know I don't eat enough fruit, but it just... I'm not fond of the sweet/ tart thing it has going on, and the textures tend to be weird. I'll eat tomatoes and avocados and cucumbers and eggplants all day long, but for some reason these are considered veggies. I don't get it, but whatever.

I'm still amazed by how much pea-stuff one pound of dry split peas made. I know i should have expected it, but the split red lentils never seemed to expand that much. Then again, they also don't taste like peas...

  1. I understand the 'not eating fruit' thing, Im just like you. I only like it in my yofu with some cereals. But Im always very happy when summer is here and we have peaches, strawberrys, ...

    Could it be any motivation when you think about the yummy bhaba ganoush that you could make with the eggplants...its so good, love the taste and texture of it. Maybe you could get some couscous or bulghur to go with it...

  2. I just thought of a cheap, easy, yummy snack if you hadn't already done it. Have you had spelt crackers? When my sister was on chemo and had to eat something with her meds (which at 5 am there wasn't much she could keep down) she picked up some spelt crackers at Whole Foods. They were super spendy so I picked up some spelt flour and made them for her. Instead of $5 for a small bag of them, I was able to make her the same amout for about .50 and you can put whatever you want on top to make them even better. And talk about super easy! Just wanted to throw that out.
