Day 27- avocado heaven

I finally broke into the avocado I picked up earlier in the week/ last week. Tomato too.

This is a sort of lazy black bean chili over rice, with avocado and tomato on top for yum

  • 2C cooked black beans
  • 1/2 onion, chopped
  • 2-4T oil
  • less than 1c water
  • salt
  • chili powder
  • garlic powder
  • paprika
  • 4 catsup packets (snagged from... somewhere)
  • splash vinegar
  • splash lime juice

fry the onion in the oil/ salt. when soft add beans, catsup, and enough water to keep everything from burning. mix the catsup/ water in. Add spices and mix some more. When the water's almost evaporated, add in the vinegar and lime juice. serve hot over rice or polenta, or in buritos.

Optional add ons-
  • sliced avocado
  • chopped tomato
  • leftover chicken
  • cheese
  • sour cream or vegan substitute
  • black olives
  • more onion
  • more tomato paste/ sauce
All in all, pretty easy. I ate it all today, though. The girlfriend of one of my roommates turned my wok into something I don't want to use anymore, so my dinner plans fell through. If she wanted a wok that bad, she could'a just bought one.

In other news, I love avocados.

And I think I'll take One Heart's advice on the granola. Much easier than muffins, and I already have everything I'd need.

Oh, and in case anyone's wondering why I keep saying that things can be made with chicken... I don't eat it, but I have friends who do, and there are people out there who think they'd starve to death without meat. super cheap food doesn't have to be veggie or vegan. Heck, sometimes it'd be cheaper to be veggie. And if you're willing to go with the super low quality stuff, meat can be less expensive than beans. It just depends. I want to offer a variety of options, even if I wouldn't use some of them myself.

  1. I'm afraid to know what happened to your wok.... I would be a very sad girl without mine so my condolences. On a lighter note I do eat meat, only when I have money to buy it, and think your recipe suggestions are great... making the sweet potato gnocchi this weekend :)

  2. I hope you like the gnocchi. It doubles, freezes, and just about everything else amazingly well, so if you like it you can save all kinds of prep time by making bigger batches next time.

    The wok thing is really the result of living with boys. And (computer) gamer boys, at that. It happens.

    Oh, and on meat- If you like chicken, legs and thighs, in big frozen (sometimes fresh) bags will usually be super cheap per pound, and have the skin and bones left for making stock or gravy with. And you might want to check around, if you live in an area with lots of hunting. One of my previous roommates was *given* half an elk once, because the neighbors had killed more than they could store. He ate well that year.
