I still managed to eat some stuff that, added together, is almost healthy.
I picked up another bag of tortilla chips- they're super useful, even when you *don't* have cheese. Also, I think I mentioned that I got another bag of black beans and a bag of flour on Thursday, but I'm not totally sure. Anyway, I did. Also, finished the star crunch candy-snack stuff.
For real food, though, I had nachos and pasta.
Nachos were made with black beans, (super cheap) tortilla chips, diced onion, and bits of chopped mozzarella. I think, based on taste, I wouldn't use Mozz. again. The taste is too mild, though the meltyness is totally there. I'll try to save the rest of it for melting into/ onto pasta, or melting onto pizza.
So then later I cooked and nommed some pasta. Made a fresh veggie "sauce" for it, using about half stuff that mom picked up for me, and filling in with things I got at the grocery store over here.
Fresh Veggie Sauce:
- 1/2 clamshell grape tomatoes, sliced in half
- 1/2-1 zucchini, halved and sliced
- 1/2 large onion, chopped
- 1-3 cloves garlic, diced
- 1 glug red wine
- 1T oil
- italian seasoning
heat oil in a pan or wok, add zucchini, onion. Stir and fry until soft and lightly browned. Add all other ingredients except wine, turn temp down. When pasta's just about ready, add wine, mix well. Add pasta and toss to coat evenly.
Wine can be subbed out with balsamic vinegar, can use fresh herbs, can use other/ additional veggies. I like Kalmata olives and floured green tomato chunks.
This makes two decent sized portions or one Monster portion. Not cheap unless you grow your own veggies.
So yeah, that's what I had yesterday. With the pasta and veggies, almost healthy, tho- right?
What did you have for day-after-thanksgiving food? Non-US-types, what do you eat on the day after big feast days? I suspect it's a big day for left-overs.
